Ingredients used in corn a beef
• Rump roast or brisket - 3 kg.
• Sugar - 3 tablespoons.
• Bay leaves - 2 numbers.
• Peppercorn - 12 numbers.
• Garlic (crushed) - 2 cloves.
• Pickling spice - 4 teaspoons.
• Salt - to taste.
• Water - 8 cups.
• Poato (cubed) - as required.
• Cabbage (chopped) - as required.
• Carrot (shredded) - as required.
Method:
  • In a large pot or crock, mix all the ingredients with water except beef.
  • Place the roast beef in the pot, cover with a lid and add a heavy weight to it.
  • Leave in the brine for at least 3 days longer prefered.
  • You may now begin to cook the corned beef if you like.
  • Add an extra garlic clove and another teaspoon of pickling spice, bring to boil and simmer for about 5 hours.
  • Half an hour before the meat is done, add potatoes, cabbage and carrots.
