Ingredients used in Egg Kurma
• Cumin seeds - 1/2 tea spoon.
• Mustard - 1/2 tea spoon.
• Cooking oil - 2 teaspoons.
• Ginger garlic paste - 1 tea spoon.
• Large tomatoes finely chopped - 4 number.
• Green chilies finely chopped - 2 numbers.
• Medium onions finely chopped - 2 numbers.
• Chopped cilantro (coriander leaves) - as required.
• Hard boiled eggs - 4 number.
• Shredded coconut. - 1/2 cup.
Method:
  • Heat the cooking oil in a pan, add mustard seeds and let it splutter then add the cumin seeds, saute it.
  • Add the chopped onions and green chilies and saute for 5 minutes till they are soft. Then add the ginger garlic paste and saute for another 4 minutes on low flame.
  • Then add all the masala powders and saute for 3-4 minutes on low flame then add chopped tomatoes, saute for 10-15 minutes by stirring occasionally till the tomatoes are soft and a thick nice gravy is formed.
  • Grind the coconut using 1 cup of water and add to the curry. Let it cook till the curry is boiled and remove from fire. Add the chopped coriander leaves and mix it well.
  • Take the gravy to a dish. Arrange the boiled eggs on top and serve it.
