Ingredients used in Semiya Egg Birinji
• Egg - 2 number.
• Oil - as required.
• Salt - to taste.
• Red chilli powder - 1 tea spoon.
• Cloves - 2 number.
• Cardamom - 2 number.
• Cashew nuts (chopped) - 4 number.
• Raisins - 4 number.
• Almonds (chopped) - 4 number.
• Green chillies (chopped) - 2 number.
• Onion (sliced) - 1 number.
• Garlic (chopped) - 1 tea spoon.
• Carrot (grated) - 1/4 cup.
• Green peas - 1/4 cup.
• Turmeric powder - 1 tea spoon.
• Ginger garlic paste - 1 tea spoon.
• Mint leaves (chopped) - 1/2 bunch.
• Coriander leaves (chopped) - 1/2 bunch.
• Tomatoes (chopped) - 1 number.
• Salt - to taste.
• Semiya/vermicelli (fried) - 1 cup.
Method:
  • Heat oil in a pan, break open two eggs, sprinkle salt, red chilipowder, fry the omellete on both sides, transfer to a plate, cut it into small pieces and keep aside.
  • Heat oil in a pan, add cloves, cardamom, cashew nuts, raisins, almonds, saute well.
  • Then add chopped green chilies, onions, garlic, carrot, green peas, turmeric powder and cook well by stirring occasionally.
  • In the same pan, add ginger garlic paste, mint leaves, chopped tomatoes, salt along with 2 cups of water, bring it to boil, add fried vermicelli, chopped coriander leaves, salt (to taste) to the above pan and cook it by stirring occasionally for about 5 minutes.
  • Transfer the choppedomellete pieces and mix well.

Delicious Semiya Egg Biringi is now ready to serve.
