Ingredients used in PUMPKIN AND MOONG DAL FRY
• Pumpkin(boiled) - 1-1/2 cup.
• Onion seeds - 1 tea spoon.
• Curry leaves - 1 spring.
• Onion(cut into cubes) - 1 number.
• Turmeric powder - 2 pinch.
• Potatoes(boiled) - 2 numbers.
• Red chili flakes - 2 teaspoons.
• Salt - to taste.
• Oil - 3 tablespoons.
• Moong dal(soaked) - 1/2 cup.
Method:
Peel and cut the pumpkin into small pieces and blanch it in some salt water. Soak the moong dal for 3 hours and drain the water. Heat oil and add onion seeds, curry leaves, onions and saute it. Add turmeric powder, moong dal, red chili flakes, pumpkin, potatoes, salt and toss it. Now the pumpkin and moong dal fry is ready to serve with roti or pulka.
