Ingredients used in MOONG UTTAPPA
• Fresh grated coconut - 1/4 cup.
• Small curry leaves - 5-8 numbers.
• Onion - half cup.
• Ginger medium piece - 1 number.
• Whole green moong dal soaked - 1 cup.
• Chopped coriander leaves as per taste - half bunch.
• Salt - to taste.
• One green chilli or more if desired (according to taste) - 1 number.
Method:
  • Wash the green whole moong dal thoroughly and soak it overnight.
  • The next day, add to it 5-8 curry leaves, the ginger, salt to taste, green chilli, a some water and grind it coursely in a blender.
  • This batter shouldnt be too thin or to thick. Transfer to a big bowl.
  • Now add to this batter the diced onions, fresh grated coconut (optional) and chopped coriander leaves.
  • Adjust the taste of salt and add add some more chilli if you so desire a more spicy taste. Mix well with a spoon. Make uthappas with either oil or ghee like you normally would.
  • Its a great variant and highly nutritious too! This can be eaten hot, topped with a blob of butter or ghee, yogurt or any chutney.
  • This batter can easily stay fresh in a refrigerator for 5-6 days and can come handy as a great breakfast food or afternoon snack.
