Ingredients used in Mint Rice
• Rice - - 1.5 cup.
• Butter - - 3 tablespoons.
• Peas - - 1 cup.
• Red bell pepper - - 1 no.
• Onion - - 1 no.
• Garlic - - 3 clove.
• Fresh mint - - 1 bunch.
• Fresh parsley - - 1 bunch.
• Lemon rind - - 2 teaspoons.
• Ground corriander (pisa dhania) - - half tea spoon.
• Canola oil - - 3 tablespoons.
• Salt - - to taste.
• Lemon juice - - 1 tablespoon.
• Parmesan cheese - - 1/3 cup.
Method:
  • Heat oil and butter in a medium heavy saucepan over medium heat.
  • Add peas, bell pepper, onion, garlic, 1 tablespoons mint, 1 tablespoons parsley, and 1 teaspoon lemon rind.Saute, keep stirring, until vegetables are slightly softened (about 2 to 3 minutes).
  • Add in coriander and rice and saute, cook, until rice grains are oil-coated (about 3 minutes).
  • Pour in stock and reduce heat to medium low.
  • Simmer uncovered for 20 to 25 minutes, or until liquid is almost absorbed and rice is tender but firm. Stir once or twice while simmering.
  • Remove pan from heat and season with salt and pepper to taste.
  • Mix in remaining mint, parsley and lemon rind, then add lemon juice and cheese.
  • Cover saucepan with wax paper and let stand 8 to 10 minutes before serving.

Serve Hot
