Ingredients used in Handi Sabzi
• Capsicum (chopped) - 1 cup.
• Onions (chopped) - 1 cup.
• Ginger garlic paste - 1 tea spoon.
• Turmeric powder - 1/2 tea spoon.
• Oil - as required.
• Cashew nuts - 8 number.
• Potato (cut into small cubes) - 1/4 cup.
• Brinjal (chopped) - 1/4 cup.
• Carrot - 1/4 cup.
• Baby corn (cut into small pieces) - 1/4 cup.
• Raw banana (cut into small cubes) - 1/4 cup.
• Tomatoes (chopped) - 2 number.
• Red chili powder - 1 tea spoon.
• Coriander powder - 1 tablespoon.
• Cumin powder - 1 tea spoon.
• Curd (beaten) - 1 cup.
• Dill leaves (chopped) - 1 bunch.
• Green peas - 1/4 cup.
• Salt - as required.
Method:
  • Heat oil in a handi (pan), add cashew nuts, chopped onions, ginger garlic paste, turmeric powder, salt and cook it till onions turn slightly transparent.
  • Now add the vegetables as per your taste and availability (i.e., in this recipe we added potato cubes, chopped brinjal, carrot, babycorn, raw banana cubes, capsicum pieces), cook well.
  • Now add chopped tomatoes, red chili powder, coriander powder, cumin powder, and fry it for some more time.
  • Add beaten curd, chopped capsicum, dill leaves, green peas (i.e., can add any green leafy vegetables) and cook well.

Hot and Delicious Handi Sabzi is now ready to serve with rice or roti of your choice,
