Ingredients used in Haleem e Khas - One Pot Haleem
• Green chilies - 5 numbers.
• Ghee - 1/2 cup.
• Dalia (broken wheat) - 1/2 cup.
• Oats - 1/4 cup.
• Almonds - 6 numbers.
• Chana dal - 1 tea spoon.
• Masoor dal - 1 tea spoon.
• Urad dal - 1 tea spoon.
• Moong dal - 1 tea spoon.
• Sesame seeds - 1/2 tea spoon.
• Cumin seeds - 4 grams.
• Cloves - 2 grams.
• Pepper corns - 3 grams.
• Cinnamon stick (2 inches) - 3 number.
• Green cardamom - 15 numbers.
• Shahi jeera - 2 grams.
• Kabab chini - 2 grams.
• Meat (boneless) - 500 grams.
• Rose petals - 1/4 cup.
• Onion (sliced) - 1/2 cup.
• Ginger garlic paste - 1 tablespoon.
• Milk - 1 cup.
• Salt - to taste.
• Fried onions - 1/2 cup.
• Curd - 1/2 cup.
• Coriander leaves (chopped) - 1/2 bunch.
• Mint leaves (chopped) - 1 bunch.
• Lime juice - 1 tablespoon.
Method:
In a bowl, add kabab chini, shahi jeera, green cardamom, cinnamon sticks, peppercorns, cloves, cumin seeds, sesame seeds, moong dal, urad dal, masoor dal, chana dal, almonds, oats, broken wheat, mix this all together put it into the blender and make a fine powder. Heat 3/4 cup of ghee in a pan, add meat, salt, green chilies, rose petals, sliced onions, ginger garlic paste, curd, milk. earlier prepared masala powder along with some water (8 times the wheat and dal mix) mix it and let it cook with closed lid for 15 minutes on a high flame (3 to 5 whistle) then cook it with reducing the flame for another 1 hour. Then open the lid, take a potato masher and mash it. Later, add fried onions, chopped coriander leaves, and chopped mint leaves, even add leftover ghee, mix it well. At last, sprinkle lime juice, mix it up. Delicious Haleem is now ready to serve with roasted cashew nuts.
