Ingredients used in Brinjal Pulihora
• Oil - as required.
• Egg plant (brinjal) - 1 number.
• Mustard seeds - 1 tea spoon.
• Cumin seeds - 1 tea spoon.
• Dry red chilies - 3 number.
• Peanuts - 1 tablespoon.
• Chana dal - 1 tablespoon.
• Urad dal - 1 tablespoon.
• Ginger (chopped) - small.
• Curry leaves - 3 springs.
• Turmeric powder - 1/2 tea spoon.
• Hing - pinch.
• Green chilies - 4 number.
• Tamarind pulp - 1 cup.
• Fenugreek powder - 1/2 tea spoon.
• Coriander powder - 1/2 tea spoon.
• Sesame powder - 1/2 tea spoon.
• Salt - to taste.
• Rice (cooked) - 1 cup.
Method:
  • Heat oil in a pan, add chopped eggplant, fry well, transfer to a plate and keep aside.
  • Add some more oil to the same pan, heat it, add mustard seeds, cumin seeds, dry red chilies, peanuts, chana dal, urad dal, chopped ginger, curry leaves,turmeric powder,hing, slitted green chilies, toss it and saute for about a minute.
  • Now add tamarind pulp, fenugreek powder, coriander powder, red chili powder, toss it, add fried eggplant pieces, salt, sesame seeds powder, saute till oil oozes out.
  • Transfer the cooked rice, toss well and turn off the flame.

Delicious Brinjal Pulihora is now ready to serve.
