Ingredients used in Brinjal in Shahi Gravy
• Brinjal eggplant (peeled & cut) - 1 big.
• Peanuts (roasted and peeled) - 2 tablespoons.
• Roasted sesame seeds - 2 tablespoons.
• Fresh coconut (pieces) - 1/4 cup.
• Curry leaves - 2 springs.
• Coriander powder - 1 tea spoon.
• Onion(chopped) - 1 number.
• Chopped coriander leaves - 1 bunch.
• Dry red chilies - 3 numbers.
• Salt - to taste.
• Oil - 2 tablespoons.
• Saunf /fennel seeds powder - 1 tea spoon.
• Dry ginger powder - 1 tea spoon.
• Mustard seeds - 1 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• Milk - 1 cup.
• Water - as required.
Method:
  1. Make a fine paste of roasted peanuts, sesame seeds, fresh coconut and keep aside.
  2. Heat oil in a pan, add mustard seeds, cumin seeds, dry red chilies, curry leaves, chopped onion, salt and cook till onion are slightly tender.
  3. Then add already prepared coconut, peanut paste and cook for another 10 minutes.
  4. In the same pan, add milk, eggplant then season with coriander powder, fennel powder, ginger powder along with little water and let it cook by stirring occasionally.

Now Brinjal in Shali Gravy is ready to serve it with hot rice.
