Ingredients used in AlooSweetPotato Curry
• Mustard seeds, jeera, urad dall and curry leaves(all spices) - 1/2 teaspoons.
• Salt - 1 to taste.
• Turmeric - 1/2 teaspoons.
• Oil - 3 tablespoons.
• Ginger & garlic paste - 1 tablespoons.
• Potato - 2 big.
• Sweet potato - 2 big.
• Onion - 1 big.
• Green chillies - 2 small.
Method:
  • Boil the potato and sweet potato in a bowl of water until they become soft. Keep that aside.
  • Make the tawa hot and put the oil to heat then add the spices along with the curry leaves until they start to splatter heat it for 2 secs then add cut green chilies then cut onion pieces. Fry the same for 2 minutes until the onion turns little brown then add ginger and garlic paste. keep mixing the mixture for 2 minutes then add salt to taste good with 1/2 tsp of turmeric for color and taste.
  • Mix the mixture well before adding the potatoes(peel the skin after boiling) and sweet Potatoes(pls peel the skin just before you add) boil for some time, mixing it quite well that the ginger garlic paste and oil mix well with the curry. then add some half glass of water to it and boil the same in little high flame while mashing the pieces of sweet potato into a paste and making the potato pieces into smaller pieces. cook for 5 minutes then add some cut coriander leaves for better taste and better serving.
  • Serve the curry with readily made hot, hot poories and one can also try this curry with hot chapatis.
