Ingredients used in Tindora Pickle
• Tindora / dondakaya (medium slices) - 1 cup.
• Fenugreek seeds - 1/2 tea spoon.
• Mustard seeds - 1 tea spoon.
• Sesame oil - 4 tablespoons.
• Garlic cloves - 5 number.
• Crystal salt - to taste.
• Dry red chilies - 4 number.
• Hing - pinch.
• Turmeric powder - 1 tea spoon.
• Tamarind pulp - 1/2 cup.
• Red chili powder - 1 tea spoon.
• Cumin seeds - 1 tea spoon.
Method:
  • Dry roast fenugreek seeds, cumin seeds, mustard seeds, transfer to a blender, grind to a fine powder and keep aside.
  • Heat sesame oil in a pan, add garlic cloves, dry red chilies, saute well, transfer to a bowl, also fry mediumly sliced tindora pieces and transfer to the same bowl.
  • Season with hing, turmeric powder, tamarind pulp, crystal salt, mix well, transfer to a blender and grind to a coarse paste.
  • Now add red chili powder, prepared masala powder,sesame oil, mix well and serve it with hot rice.
