Ingredients used in STUFFED KARELA
• Bitter gourd - 4 numbers.
• Ground nut - 1/4 cup.
• Sesame seeds - 1 tablespoon.
• Red chili powder - 1 teaspoons.
• Cumin powder - 1/4 teaspoons.
• Coriander powder - 1/4 teaspoons.
• Salt - to taste.
• Jaggery - pinch.
• Oil - as required.
• Mustard seeds - 1/4 teaspoons.
• Red chillies - 2 numbers.
• Curry leaves - 1 spring.
• Tamarind juice - 1/2 cup.
Method:
Cut bitter gourd into big roundels and in center make a hollow by removing seeds. Heat pan add ground nut dry roast it, later add sesame seeds and dry roast for 1 minute. Switch off flame and allow it rest for some time and transfer into blender. To it add red chili powder, cumin powder, coriander powder, salt, little jaggery and blend into a powder. Stuff this powder into bitter gourd and keep aside. Heat oil in a pan, add mustard seeds, red chillies, curry leaves and saute it. Add stuffed bitter gourd and cook it slightly with lid on it. To it add tamarind juice and cook again with lid on it. Once it soft switch off flame and it delicious if you rest it for 1 day and serve it.
