Heat some oil in a pan, add onions and red chillies and fry till the onions are golden brown. Add the shredded coconut, ginger, garlic, green peas, and green peppers and fry for 6-7 minutes on medium heat. [If using potatoes, add them before all other vegetables and cook them till they become soft before adding other vegetable]. 4. Add tomatoes to the pan and fry till the oil gets released from the mixture. At this point add the yogurt spice blend. Cook for a 5-6 minutes. Adjust spice/salt at this point. 5. Add the deep-fried shrimp to the mixture and cook for 10-12 minutes. Garnish with coriander leaves and serve hot with rice.
