Ingredients used in QASAR E QUBOOLI
• Pumpkin - 1 number.
• Salt - to taste.
• Oil - 3 tablespoons.
• Cardamom - 5 numbers.
• Cloves - 5 numbers.
• Bay leaf - 1 number.
• Cinnamon - 2 sticks.
• Star anise - 1/2 piece.
• Mace - 2-3 grams.
• Black cumin seeds - 1/2 tea spoon.
• Kalpasi - 4 grams.
• Onions(slices) - 1 number.
• Green chillies - 3 numbers.
• Ginger garlic paste - 1/2 tea spoon.
• Green chili paste - 1/2 tea spoon.
• Basmati rice - 1 cup.
• Turmeric powder - 1/4 tea spoon.
• Red chili powder - 1 tea spoon.
• Coriander powder - 1/2 tea spoon.
• Cumin powder - 1/2 tea spoon.
• Coriander leaves(chopped) - 1/2 cup.
• Mint leaves - 1/2 cup.
• Chana dal(soaked and boiled) - 1 cup.
• Yogurt - 1/2 cup.
• Lime juice - 1 tablespoon.
• Saffron - 1 pinch.
• Ghee - 2 tablespoons.
• Fried onions - 1/2 cup.
Method:
  • Cut upper portion of pumpkin and remove seeds so that we can stuff biryani.
  • Spread little salt inside and pork it with fork from outside.
  • Soak basmati rice for 30 minutes and strain the water.
  • Boil water in pan and add basmati rice, little salt, 1 pinch black cumin seeds, 1 tablespoon oil and cook it.
  • Stain water and rest it.
  • Heat oil in a pan and add cardamom, cloves, bay leaf, cinnamon, star anise, mace, black cumin seeds, kalpasi and saute it.
  • To it add onions, green chillies, ginger garlic paste, green chili paste and saute it.
  • To it add turmeric powder, red chili powder, coriander powder, cumin powder, coriander leaves, mint leaves, chana dal, yogurt and cook it.
  • Switch off flame then add lime juice and mix it.
  • Add chana dal mixture as a layer, spread another layer of rice and top it with saffron in little water.
  • Add ghee on top and upper portion of pumpkin spread wheat dough and seal lower portion of pumpkin.
  • Take the steamer and add water, ginger garlic paste then place steamer tray.
  • On it add pumpkin and place lid and cook for 45 minutes.
  • For plain qubooli take another pan and add leftover chana dal mixture, rice, saffron water and place the lid and cook it for 12- 15 minutes.
  • Now spread the biryani in a round circle and place pumpkin biryani in the center and garnish with mint leaves and coriander leaves.

Now qasar r qubooli is ready to serve.
