Ingredients used in Potato Curry
• Boiled potatoes - 6 numbers.
• Green chilies (chopped) - 3 numbers.
• Dry ginger powder - 1/2 tea spoon.
• Dry mango powder/amchur - 1 tea spoon.
• Chili powder - 1 tea spoon.
• Turmeric powder - 1 tea spoon.
• Sugar - 2 teaspoons.
• Cumin seeds - 1 tea spoon.
• Asafoetida - 1/4 tea spoon.
• Coriander leaves (chopped) - 1 cup.
• Oil - as required.
• Salt - to taste.
• Water - as required.
Method:
  • Peel and cube the boiled potatoes and also mash them slightly and keep aside.
  • Heat 4 tablespoon of oil, add asafoetida and cumin seeds, saute it.
  • When they pop, add the mashed potatoes, green chilies, turmeric powder, ginger, dry mango powder, sugar and salt.
  • When they are fried well, add water to make into a thin gravy. When done, remove from heat.
  • Heat 1 tablespoon of oil, pour it over the potatoes and immediately sprinkle with chili powder and coriander leaves.

Serve Potato curry with Puris or Rice.

I assume the instructions should say to boil the potatoes? Hard to mash them raw....can you also define the spice that begins with the A? Love your enthusiasm~
