Ingredients used in PLANTAIN FRY IN TOMATO GRAVY
• Raw plantain - 2 numbers.
• Cashew nuts - 8 numbers.
• Poppy seeds - 1 tablespoons.
• Fennel seeds - 1 teaspoons.
• Sesame seeds - 1 teaspoons.
• Green chillies - 3 numbers.
• Fresh coconut(grated) - 1 tablespoons.
• Onions(chopped) - 1 numbers.
• Cumin seeds - 1 teaspoons.
• Ginger(finely chopped) - 1 teaspoons.
• Garlic(finely chopped) - 1 teaspoons.
• Turmeric powder - 1/2 teaspoons.
• Tomato(chopped) - 1 numbers.
• Salt - 0 to taste.
• Red chilly powder - 1 teaspoons.
• Coriander powder - 1/2 teaspoons.
• Cumin powder - 1/2 teaspoons.
• Garam masala - 1/2 teaspoons.
• Kasuri methi - 1/2 tablespoons.
• Coriander leaves(chopped) - 1 tablespoons.
• Mint leaves(chopped) - 1 tablespoons.
• Oil - 1 to fry.
• Green peas - 1/2 cup.
• Yogurt - 2 tablespoons.
Method:

1. Remove the peel of plantain and cut into the thick and small pieces, then deep fry in hot oil and take into a paper towel. 2. Take a pan and add cashew nut, poppy seeds, fennel seeds, sesame seeds and dry roast it and transfer into the mixie jar. 3. To it add green chillies, coconut and blend it into a smooth paste. 4. Heat 5 tbs oil in a pan and add cumin seeds, onions, ginger and garlic and saute it. 5. Add turmeric powder, tomato, salt, red chilly powder, coriander powder, cumin powder and keep a lid on it and cook it. 6. Add the paste, little water and mix thoroughly and check the seasoning. 7. To it add the green peas, yogurt and boil it. 8. Then add the fried plantain then mix thoroughly and keep the lid on and cook it on slow flame for 5 mins. 9. Atlast add garam masala, kasuri methi, coriander leaves, mint leaves and mix thoroughly. 10. Now the plantain gravy is ready to serve with rice, roti, naan, chapati.
