Ingredients used in Pineapple Peanut Stew
• Pineapple - 2 cups.
• Garlic - 2 cloves.
• Onion - 1 cup.
• Kale - 4 cups.
• Peanut butter - half cup.
• Hot pepper sauce - 1 tablespoon.
• Cilantro, chopped - half cup.
• Vegetable oil - 1 tablespoon.
• Salt - to taste.
Method:
  • In a covered saucepan add oil, saute chopped onion and garlic for 10 minutes, stirring frequently, until the onions are lightly browned.
  • While the onions saute, wash the kale. Remove the stems. Stack the leaves on a cutting surface and slice crosswise into 1-inch-thick slices.
  • Add the pineapple and its juice to the onions and bring to a simmer.
  • Now add in the kale, cover, and simmer for about 5 minutes, stirring a couple of times, until just tender.
  • Then add peanut butter, hot pepper sauce, salt and simmer for 5 minutes.

Serev hot.
