Mutton and ridge gourd curry is an excellent meat preparation with mutton cooked in ridge gourd gives an unique taste.
- Boil mutton in 2 cups of water and strain the mutton pieces. keep aside.
- Now, transfer the left over water of mutton pieces in a bowl and keep aside.
- Heat oil in a pan, add whole garam masala spices, cumin seeds, green chillies, ginger garlic paste, chopped onions, saute it.
- Add turmeric powder, salt, ridge gourd pieces and mix well.
- Now, add mutton stock to the above pan and add poppy seeds paste, and let it cook with closed lid till ridge gourd is tender.
- Then add boiled mutton, cook this along with ridge gourd on slow flame for about 5 minutes.
- At last, add chopped mint leaves, coriander leaves and mix well. Later, switch off the flame.
