Ingredients used in Mchuzi wa biringani (Eggplant curry)
• Eggplant - 3 numbers.
• Tomato - 3 numbers.
• Potato - 3 numbers.
• Onion - 1 number.
• Ghee - 3 teaspoons.
• Salt - 1 tea spoon.
Method:
  • Chop eggplant, tomatoes and potatoes into small slices.
  • In a pan, add ghee and chopped vegetables. cook and stir continously.
  • When tomatoes and egg plant are well done, add some water and stir until thick curry is formed.
  • Check for readiness of potatoes. If cooked, then all is ready.

Serve hot.
