Ingredients used in Mango Kerala Curry
• Mango (cut into big pieces) - 1 cup.
• Cumin seeds - 1 tea spoon.
• Green chilies - 3 number.
• Ginger (1 inch) - 1 number.
• Coriander leaves - 1/2 bunch.
• Coconut (freshly grated) - 1/2 cup.
• Water - as required.
• Hing - pinch.
• Turmeric powder - 1/2 tea spoon.
• Red chili powder - 1 tea spoon.
• Curd - 1/2 cup.
• Coconut milk - 1/2 cup.
• Salt - to taste.
• Oil - as required.
• Mustard seeds - 1 tea spoon.
• Dry red chilies - 3 number.
• Fenugreek seeds - 1/2 tea spoon.
• Curry leaves - 3 springs.
Method:
  • Blend cumin seeds, green chilies, ginger, coriander leaves, freshly grated coconut and water to a fine paste.
  • Boil water in a pan, addhing, turmeric powder, jaggery, mango pieces and cook well.
  • Now add red chili powder, prepared masala paste and cook it by stirring occasionally for about 1-2 minutes.
  • Add curd, coconut milk, salt to the same pan and let it cook forfew for minutes.

For Tempering:

  • Heat coconut oil in a pan, add mustard seeds, dry red chilies, fenugreek seeds, curry leaves and saute it.
  • Transfer this tempering to the above gravy and mix it well.

DeliciousMango kerala curry is now ready to serve.

When I want to see how to cook a dish, I want to see Vah-Chef himself. I don't want to see a youngster to copy his choreography. I will if this happens - for me - too often I will unsubribe. A Copy show is void
