Ingredients used in Maharashtrian Mutton Russa
• Whole masala - tablespoon.
• Dry coconut power - 6 tablespoons.
• Mutton - 1000 grams.
• Onions - 500 grams.
• Garlic - 6 cloves.
• Coriander paste - 2 tablespoons.
• Garam masala powder - 1 tea spoon.
• Red chilli powder - 1 tea spoon.
• Turmeric powder - 1 tea spoon.
• Salt - to taste.
• Ginger - 1 small.
• Water - as required.
• Oil - as required.
• Coriander leaves (chopped) - 1/2 bunch.
Method:
  • You take 1kg of mutton and wash and then marinate it with ginger, garlic and coriander paste.
  • Then after some hours, put oil in the pan and then add finely chopped onions to it and then saute the marinated mutton and let it cook for a while.
  • In a pan add finely chopped onions, dry coconut powder, ginger, garlic and coriander and then roast the onions till they become really brown and then roast the coconut power both separately and then add them together and roast again.
  • Then put it in the mixer and and add ginger, garlic to it.
  • Take a pan add oil, whole garam masala, chopped onions and then add the mixture to it and saute till the oil ozes out. Then add the garam masala poweder and red chilli powder.
  • Put the another mixture to it that we had separately with mutton.
  • Remember to put a little more water to the mutton if you want to have a lot of curry, because this stock is very tasty.
  • Wait for another half an hour till the mutton cooks well and absorbs all the masala to it.
  • So then once it is well cooked, you remove it from the heat and add fresh coriander leaves to it.

This mutton tastes very well with Jowar Bhakari or roti.
