Ingredients used in Fish Baked with Tomatoes and Spices
• Halibut steaks - 4 numbers.
• Onion - 1 number.
• Jalapeño - 2 numbers.
• Vegetable oil - 2 tablespoons.
• Tomato - 500 grams.
• Vinegar - 2 tablespoons.
• Cumin powder - half tablespoon.
• Coriander powder - 3/4 tea spoon.
• Garlic - 2 cloves.
• Salt - to taste.
• Coriander leaves (optional) - 4 springs.
Method:
  • In a pan, heat oil, saute onion, garlic and peppers until onion is tender.
  • Reduce heat and add remaining ingredients except fish. Cook uncovered over low heat, stirring occasionally, 5 minutes.
  • Arrange fish in ungreased 12 x 7-inch baking dish. Spoon tomato mixture over fish. Bake uncovered at 355 degrees F until fish flakes easily with fork 25 to 30 minutes.
  • Garnish with chopped coriander leaves if desired.
