- Heat oil in a container and add chopped or crushed ginger and garlic, saute it till it becomes brown color.
- Add sliced onions, coriander roots, cumin, peppercorns, red chilies and saute it
- Then add chopped sweet pumpkin, little bit of salt and mix it well.
- Once it is caramelised and pumpkin is cooked add little water and let it cook for 2 minutes.
- Switch off the gas and let it cool for a while then transfer into a mixie jar to make a fine pumpkin paste.
- Then transfer into the same container and add coconut milk, little bit of salt and let it simmer for 5minuutes.
- Meanwhile dry roast sunflower seeds and saute few curry leaves in oil.
- Take soup in a bowl garnish it with roasted sunflower seeds, fried curry leaves, olive oil and a sprig of coriander leaf.
Enjoy this soup when it is hot.
