CREAMY PUMPKIN AND COCONUT SOUP

Ingredients used in CREAMY PUMPKIN AND COCONUT SOUP
• Oil - 2 teaspoons.
• Ginger and garlic(crushed) - 1 tea spoon.
• Onions(sliced) - 1 number.
• Coriander roots - 1 bunch.
• Peppercorns - 5 numbers.
• Dry red chillies - 2 numbers.
• Sweet pumpkin - 1 cup.
• Salt - to taste.
• Coconut milk - 1 cup.
• Sunflower seeds - 1 tablespoon.
• Curry leaves - 1 spring.
• Cumin seeds - 1 pinch.
• Olive oil - 1 tea spoon.
• Coriander leaf - 1 springs.
Method:
  • Heat oil in a container and add chopped or crushed ginger and garlic, saute it till it becomes brown color.
  • Add sliced onions, coriander roots, cumin, peppercorns, red chilies and saute it
  • Then add chopped sweet pumpkin, little bit of salt and mix it well.
  • Once it is caramelised and pumpkin is cooked add little water and let it cook for 2 minutes.
  • Switch off the gas and let it cool for a while then transfer into a mixie jar to make a fine pumpkin paste.
  • Then transfer into the same container and add coconut milk, little bit of salt and let it simmer for 5minuutes.
  • Meanwhile dry roast sunflower seeds and saute few curry leaves in oil.
  • Take soup in a bowl garnish it with roasted sunflower seeds, fried curry leaves, olive oil and a sprig of coriander leaf.

Enjoy this soup when it is hot.
