Ingredients used in Colocasia Lotus Flax Nuts Curry
• Colocasia (boiled and chopped) - 1 cup.
• Lotus flax nuts - 1 cup.
• Oil - as required.
• Ajwain - ½ tea spoon.
• Hing - pinch.
• Turmeric powder - 1 tea spoon.
• Coriander powder - 1 tea spoon.
• Cumin powder - 1 tea spoon.
• Red chili powder - 1 tea spoon.
• Garam masala powder - 1 tea spoon.
• Kasuri methi (crushed) - 1 tea spoon.
• Water - as required.
• Salt - to taste.
• Tomatoes - 3 numbers.
• Green chilies - 4 numbers.
• Ginger - 1 piece.
Method:
  • Blend tomatoes, ginger, green chilies into a fine paste.
  • Heat oil in a pan, add ajwain, hing, turmeric powder, coriander powder, red chili powder, cumin powder, garam masala powder, and mix well by adding crushed kasuri methi.
  • Now add the prepared tomato puree, let it cook till oil oozes out of the gravy.
  • Then add water, boiled colocasia, lotus fox nuts, and salt.
  • Cook the gravy to your desired consistency and serve it with hot rice.
