Ingredients used in BeetRoot Curry
• Buttermilk - 2 cups.
• Hing - ounces.
• Mustard seeds - 1 tea spoon.
• Dry red chilies (chopped finely) - 5 number.
• Sprig curry leaves - 1 spring.
• Diced beetroot (drained) - 2 cups.
• Water - 1 cup.
• Oil - (2-3) teaspoons.
• Salt - to taste.
Method:
  • Heat the oil in a pan, add mustard seeds, red chilies, curry leaves and saute it till mustard seeds crakle.
  • Then add beetroot and salt to taste. Cook with closed lid for about 4 minutes.
  • In the same pan, add buttermilk, water, hing and mix it well. Stir fir on a low flame for another 2-3 minutes.

Eat with plain rice.
