This is north Indian style delicious spicy e??gg curry. It is served with roti and rice.
- Take a bowl and add eggs, ¼ teaspoon red chili powder, little salt and beat it, add mint leaves and beat again.
- Heat oil in a pan and add onion slices, salt, sugar and saute it.
- To it add green chillies, ginger garlic paste, turmeric powder, coriander powder, ¼ teaspoon red chili powder, little water and mix nicely.
- On slow flame add beaten egg mixture and on top of it add chopped spring onion, garam masala and cook it with lid on it for 2-3 minutes.
- Switch of flame and transfer into serving plate.
Now ande ki curry is ready to serve with roti and rice.
