AMARANTHUS POTATOES

Ingredients used in AMARANTHUS POTATOES
• Amaranthus leaves - 4 bunch.
• Sorrel leaves - 2 bunch.
• Oil - 2 tablespoons.
• Mustard seeds - 1/4 tablespoon.
• Dry red chillies - 2-3 numbers.
• Cumin seeds - 1/4 tea spoon.
• Garlic(chopped) - 4 cloves.
• Ginger - 1 piece.
• Onion - 1 number.
• Salt - to taste.
• Turmeric powder - 1/4 tea spoon.
• Green chilli - 4-5 numbers.
• Potato - 200 grams.
• Coriander powder - ½ tea spoon.
• Cumin powder - ½ tea spoon.
Method:
  • Heat oil in a pan add mustard seeds, dry red chili when mustard seeds splutter add cumin seeds, chopped garlic, chopped ginger, onion slices, salt, turmeric powder saute it for a minute then add chopped green chili, boiled potato pieces, coriander powder, cumin powder toss it.
  • Now add amaranthus leaves, sorrel leaves cook for 5 minutes.

Serve this with chapati or rice.
